Specs. These will be OAL of 300mm about 13″
Blade will be San mai Stainless cladding over Blue#2 core. RC 63
Blades will measure no less the 8″ tip to heel.
The height of the blade at the heel will be 52mm
Spine thickness above the heel will be approx 3.5mm. With a defined taper to the tip.
Grinds. are a combination of my Work Horse style ridged grinds and a Kato-esq style grind that is a V grind thin behind the edge with a convex above that..

Handles. are a full tang Wa style. Octagon shape.  Tapering both in width and height from the front to the back.
Handles will be made from Highly figured Ironwood. Each handle will have a HHH style spacer/liner set up with Black and copper And be secured with copper pins with a center pin to be a Matching HHH Mosaic pin.

This is a PRE BUY. here is what I have planned for delivery dates.

Hello and good day. I have been working on a new profile and handle style and am finally ready to offer these to you knife knuts!
Let me tell ya a little about the design.  These will be a Workhorse style knife a little bit thicker then my standard gyutos. With more convexity and a nice V grind that thin behind the edge. I based this grind off of of very well known and respected Japanese knives. In short. Its my version of a Kato grind.   The blade shape is also changed from my standard to have a more “pointy” tip and a tad bit more belly throughout the cutting edge.   Overall these small changes make HUGE differences in how a knife preforms. and I am confident once you use this knife you will agree that it is a amazing combination..  My goal is to have these all delivered B4 July 4th, 2016 So I will only be doing a limited number.  All of these will be 100% hand made here in my shop by myself and Randy Jr.  From forging the san mai to the finished knife and handle.  I welcome any questions. Photos are examples of some of the “test” blades and proto type. The actual blade and handle you will receive will be as described above.  Main photo is the blade and handle style both in size and shape of these pre buy gyutos.

I am also offering a Matching Paring knife option. where if you buy the Gyuto and pairing knife together you get further savings.
I will also be making 2 petty/utility cutters that will be offered  when completed. But will match these in materials and design.
